'Smoke on the Island' to feature tasty menu, contest for children

The Community House is offering the islands an opportunity to kick off the Fourth of July holiday early with a special barbecue that is open to residents and visitors.

The "Smoke on the Island" Hog Roast will take place June 30 from 5 to 8 p.m., with Resident Chef Jarred Harris preparing the main course and sides. The menu will feature slow-roasted pig with Sanibel Mango BBQ Sauce, served up with tomato and fresh mozzarella salad, baked beans and yucca fries.

There will be an optional Ice Cream Sundae bar, along with a children's dessert contest. The participants are being asked to bring two of their entry in order to auction one off to the crowd.

"We do fundraisers for our Culinary Education Center every year, through this really isn't a big fundraiser as much as something to get the community together," Harris said.

"We'd love for visitors to come and see our Community House," he added.

For a hog roast last year, Harris cooked up two 80-pound pigs. Expecting to do the same this time, he explained that the hogs will be roasted in the smoker for about eight to 10 hours with cherry wood.

They will come with the Sanibel Mango BBQ Sauce.

"That's our signature barbecue sauce. It'll be made with our local mangoes from the island," Harris said, adding that the mangoes were donated by residents. "They're in-season right now."

"It's a combination of sweet and savory," he added of the taste. "It's delicious."

The tomato and fresh mozzarella salad will add a healthy fresh element.

"It's very summery and I like the colors," Harris said. "There'll be a light vinaigrette atop the salad."

A root vegetable, yucca is starchy and offers a lot in terms of nutritional value.

"It's starting to become very popular in the culinary world," he said, explaining that yucca fries are versatile in they can be roasted or fried, without getting soft quickly. "They stay crisp for a long time."

"Just add a little salt and pepper," Harris added. "You really don't need to do a lot to them."

He described the beans to be served as also sweet and savory.

"They're my 'lumberjack baked beans,'" Harris said. "It's a family recipe."

He hinted at onions, brown sugar and maple syrup as just some of the ingredients.

"There'll be no meat, there's no bacon or anything in them," Harris said. "They are special."

For an extra $5, diners can enjoy the Ice Cream Sundae bar. Featuring Love Boat Ice Cream, the options will range from vanilla and chocolate with extras like carmel, to key lime pie. There will be a range of toppings like whipped cream and sprinkles, along with some made-from-scratch sauces.

"We make the carmel sauce and we make our chocolate sauce," he said.

To add a fun twist to the dinner, children ages 8-14 can register in advance for the contest.

"It's an open dessert - they're going to make it and bring it," Harris said. "They can make whatever they want to make, but it has to be red, white and blue."

A panel of three, surprise celebrity judges from the island will decide on the winners.

"We've had baking contests before for adults, but not for children," he said. "It's something fun for the kids to do. It makes them better cooks and more interested in cooking."

Harris explained that the barbecue is a prelude to a larger event set for October.

"That's going to be an amateur barbecue competition," he said, pointing out that the Florida BBQ Association will be involved. "We're going to have professional judges."

The public is encouraged to pick up their tickets soon.

"It's a day of fun," Harris said, adding that those in attendance can catch up with neighbors and meet new people. "That's what The Community House is all about, bringing the community together."

Tickets are $15 per person and a limited number are available.

They are on sale at the venue and at Bailey's General Store on Sanibel.
